Some tools you just gotta have, like a rear caliper piston tool (down the page). Here a couple of other ideas.
Electrical connectors: Bits of metal from wiper blades (especially the Euro style with two separate metal ribs) are strong enough to let you pull terminals out of plastic connectors. There are some that won't yield, though, like the connector to the a/c pressure switch.
Brakes: I made a tool to fit the piston of the rear caliper from a scrap socket and some scrap steel.
CV joints: For fastest removal, I built a tool (currently broken) from a used socket and cut up a 6mm Allen wrench (assuming you've already switched to VW style (6 point) bolts). This tool has the least trouble clearing the CV boots, getting the bolts on and off.
